Payday Caramel Corn

This is my Halloween Treat for all my little pretties

I think everyone loves Caramel Corn and then add peanuts,candy corn and white chocolate, EXPLOSION of sugar awesomeness! Super easy,yummy and this corn screams Halloween.They say if you eat a peanut and a candy corn together it tastes like a Payday Bar. Brilliant I say! This is gonna be good.

I bought one of those HUGE bags of popcorn from Costco ( enough for 2 batches, followed these easy instructions and done.

Wrapped up cute they will make great little gifts.  Who doesn’t love to get homemade goodies wrapped up with love?  Happy Halloween!

Payday Caramel Corn

Ingredients

1 cup unsalted butter
2 cups brown sugar
1/2 cup light corn syrup
1 tsp kosher salt
1/2 tsp baking soda
1 tsp vanilla extract
2 1/2 bags of popped corn (remove seeds), about 5qt popped ( I used prepopped corn from Costco the Naked kind)
16oz pkg vanilla bark
21oz bag candy corn
1 1/4 cup salted, roasted peanuts
Instructions

Pop popcorn according to package. Place popped corn into a large mixing bowl (make sure to not add any seeds). Set aside.
In small saucepan over medium heat, melt butter with sugar, corn syrup and salt. Bring to a boil. Remove from heat. Stir in baking soda and vanilla. Pour over popped corn. Mix well.
Divide caramel corn mixture evenly into two foil lined broiler pans (or large disposable lasagna pans would work too) Bake in a 250 degree oven for one hour. Stir every 15 minutes, and rotate in oven.
After one hour, remove from oven and pour into a large mixing bowl. Melt vanilla bark according to package directions and pour over caramel corn. Add in peanuts and candy corn. Pour onto parchment paper (I lay a big strip down on my counter top) and allow to set, about 30 minutes). Once chocolate is set, fill two large gallon sized ziploc bags and seal.

Fall Mantle’s 2013

I went simple and rustic with my mantle this year. I used my frame from the “Halloween Mantle”IMG_2549

Remember the skull picture my son drew, love it. Anyway I flipped it over and drew a pumpkin with a black sharpie and some chalk. Kinda looks like a tomato but its a “White Pumpkin” thank-you.Getting a lot of use out of my frame this year.Just kinda plucked out the Halloween goodies and traded them for Fall goodies.

This is my BFF’s fall mantle, its so cute. She went light and bright and whimsical.

Aline did a awesome job. She hand decorated all the pumpkins that are in the fireplace,loving the clock and the cute little Owls, they make me smile. What I really admire about her is I know how much she enjoys decorating and crafting and it really shows, appreciate her sharing it with us.

This is a healthy alternative to candy, I know it’s a little pricy to make them up for give a ways , so save them up for parties or just your special little Trick or Treat’ers

I bought these single serving Carmel Dips at the grocery store right next to the apples. Popped them into a cello bag with a Granny Smith Apple (best for caramel dipping) and tied up with holiday ribbon. Healthy, cute and festive for the Halloween season.

Creating Your Holiday Vignette

This is my “Vignette” also known as a grouping or table scape. It’s a collection of some of your favorite pieces grouped together on a shelf, coffee table, counter etc. Fun to create by picking a theme, rummaging thru your house to find items that will play well together and pulling it all together.

So I recently learned the correct term for this is a “Vignette” as the designers call it. Ok whatever. I do know this, that there is a correct way to do one or “ITS JUST NOT RIGHT” We have all made one of those.

Here is what I pulled together for my Vignette. I am proud of it and it makes me smile when I pass by. There is stuff in there from Target to O’Flanary’s Emporium and Hobby Lobby and who knows where else. I only put the poster board behind it so the picture would stand out. Excuse yourself Mr. Poster Board!

Top Halloween Movies

When I was a teenager I loved the Horror Movies. Then I became a little older with children and couldn’t let them  see this stuff and cling to me in my bed every night.

Now I’m even older, kids are grown and gone and I kinda crave a good scary movie when it gets close to Halloween.

Somewhere along the years my daughter Kelly Ann developed a love for Scary movies.I think it was “Chucky” that she secretly watched with her cousin that sucked her in. Anyway now she can tell you who’s who and what’s what about “Horror Flicks” so listed below is “Entertainment Tonight’s” top picks and “MIss Kelly’s horror flick picks.”

I think her and I can agree that there is something to a cold Autumn night, big bowl of popcorn, lights turned down low and a scary horror flick playing on the tube,with the one you love to protect you.

Qualifications for a good scary movie: Does the movie startle you, make you anxious, get your heart pumping, or just plain gross you out.

Butternut Squash Soup w/Pie Crust Croutons

There are a lot of Butternut Squash Soup recipes going around right now but this one has a few different twists to it. It is a lighter version of most soup’s due to the Coconut milk instead of heavy cream, it’s a recipe from Kelly Osbourne‘s diet tips, yes  Ozzie Osbourne‘s daughter,that’s where the Halloween part come’s in because Ozzie puts out a Halloween  feel don’t you think( I mean biting heads off bats)? Plus nothing says “FALL” like Butternut Squash. She says she ate this a lot while she was loosing  her weight.

Kelly’s Butternut Squash Soup

2 Tablespoons extra virgin olive oil
2 garlic cloves, minced
1 medium onion, diced small
1 large, or 2 pounds butternut squash, peeled, seeded, then cut into 1 inch cubes
2 medium carrots, peeled and chopped
1 potato, Yukon gold or russet, cut into 1 inch cubes
4 cups vegetable stock or water
1 cup canned coconut milk
Salt and pepper as needed

1. In a large pot, heat oil to medium-low. Add garlic, onions and a pinch of salt, stirring until translucent, about 3 to 5 minutes.

2. Add squash, carrots, potato and stock, bring to boil, lower heat to a simmer and cook for 25 to 30 minutes or until vegetables can be easily pierced with a fork. Remove from heat and add the coconut milk(see my tip if you can’t find Coconut Milk)

3. Puree soup in a blender, working in batches so you don’t overflow. Season with salt and pepper to taste. ( I used my hand-held stick blender, if you don’t have one get one)

4. Garnish with a sprig of thyme or chopped parsley and a drizzle of good quality extra virgin olive oil.(I used a sprig of thyme and pie crust croutons)

Makes six 1-cup servings. Each serving: 219 cal, 13 g fat.

* I did not have coconut milk in a can, but I did have Cream of Coconut, so I mixed 1/2 cup with 1/2 cup evaporated milk. It probably made calories go out a bit but was very tasty and on the sweet side.

I sprinkled my “Pie Crust Croutons” on top and served with a grilled cheese Sammie.

Butternut Squash

I used part pre-cut squash and part fresh just because that’s what I had. Buy fresh its just a little more work peeling and chopping but its cheaper and fresher. Always a better choice.

My daughter Kelly and I both loved it and she says it’s a keeper and should be shared.
