Payday Caramel Corn

This is my Halloween Treat for all my little pretties

I think everyone loves Caramel Corn and then add peanuts,candy corn and white chocolate, EXPLOSION of sugar awesomeness! Super easy,yummy and this corn screams Halloween.They say if you eat a peanut and a candy corn together it tastes like a Payday Bar. Brilliant I say! This is gonna be good.

I bought one of those HUGE bags of popcorn from Costco ( enough for 2 batches, followed these easy instructions and done.

Wrapped up cute they will make great little gifts.  Who doesn’t love to get homemade goodies wrapped up with love?  Happy Halloween!

Payday Caramel Corn

Ingredients

1 cup unsalted butter
2 cups brown sugar
1/2 cup light corn syrup
1 tsp kosher salt
1/2 tsp baking soda
1 tsp vanilla extract
2 1/2 bags of popped corn (remove seeds), about 5qt popped ( I used prepopped corn from Costco the Naked kind)
16oz pkg vanilla bark
21oz bag candy corn
1 1/4 cup salted, roasted peanuts
Instructions

Pop popcorn according to package. Place popped corn into a large mixing bowl (make sure to not add any seeds). Set aside.
In small saucepan over medium heat, melt butter with sugar, corn syrup and salt. Bring to a boil. Remove from heat. Stir in baking soda and vanilla. Pour over popped corn. Mix well.
Divide caramel corn mixture evenly into two foil lined broiler pans (or large disposable lasagna pans would work too) Bake in a 250 degree oven for one hour. Stir every 15 minutes, and rotate in oven.
After one hour, remove from oven and pour into a large mixing bowl. Melt vanilla bark according to package directions and pour over caramel corn. Add in peanuts and candy corn. Pour onto parchment paper (I lay a big strip down on my counter top) and allow to set, about 30 minutes). Once chocolate is set, fill two large gallon sized ziploc bags and seal.

Autumn Free Printable

Everybody love’s free printable’s, I do!

Here is one that I got from jonesdesigncompany.com/decorate/autumn-essentials-freebie-art-print/

She has a great blog with lots of cute ideas. I like her style and free printable’s. I put mine  in this black frame and tucked it into a corner. Don’t you think this would  make a cute Hostess gift, wrapped up with some Candy Corn. That’s my idea for the day, cause I would think that was special. Sometimes it’s the simple cute little things that are fun.

This guy is just too cute and easy to make. The kids could help!

♥ Golden Oreo Cookies

♥ Bite Size Nutter Butter Cookies

♥ Candy Corn, Red Gummi Bears, Can Squirt Frosting in Vanilla,mini chocolate chips

♥ Lollipop Sticks, cello bags, ribbon

I unscrewed the Golden Oreo and made a ring of icing on one half, then placed 6 or 7 candy corn for its feathers and the lollipop stick, placed a dab of frosting to hold other half of cookie on,placed cookie top back on. Put a dab of frosting on mini nutter butter and placed it on Oreo. Cut off piece of red gummy and the white tip-off a candy corn and glued them in place with frosting. Put two dots of the white frosting for eyes and top with a mini chocolate chip on both for pupils. You have to let them sit for a while so the icing can harden and hold it all together. Place in a cello bag and tie with ribbon. I thought they would be cute displayed in one of those styrofoam pumpkins, stick the lollipop sticks into the pumpkin to hold up and display before they eat them all.

These little guys are really easy also, Here is what you need:
♥ Graham Crackers

♥ Big marshmallows

♥ Yellow Melt Aways (you can get them at Michael’s or Hobby Lobby)

♥ Candy Corn, Chocolate Chips

♥ Can of squirt frosting in Vanilla

Break the cracker in two, cut marshmallows in half and set them on the cracker cut side up, place a yellow melt away in each marshmallow and microwave anywhere from 5-10 seconds, until the marshmallow starts to puff up and the melt away will become soft. I had to play around with this step cause kind of tricky, but you will figure it out. Then I put a dab of frosting on back side of chocolate chip and placed on the melt away for the pupil and a dab of frosting on back side of candy corn and placed in the middle for the nose. Then let them sit awhile so every body part is glued together and you can then bag them and place some ribbon. You and the kids can have fun making these also.

Kandy Korn Uses

Zucchini Cupcakes

  • ♥ 3 1/4 cups flour
  • ♥ 1 1/2 t. salt
  • ♥ 1 t. ground nutmeg
  • ♥ 2 t. baking soda
  • ♥ 1 t. ground cinnamon
  • ♥ 3 cups sugar
  • ♥ 1 cup veggie oil
  • ♥ 4 eggs, beaten
  • ♥ 1/3 cup water
  • ♥ 2 cups grated zucchini
  • ♥ 1 t. lemon juice
  • ♥ 1 cup chopped walnuts or pecans

Preheat oven to 350 degrees. In a large bowl, combine flour, salt,nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake 20-25 minutes or untill tester comes out clean.

♥ I used 1 cup of applesauce in mine instead of the veggie oil just to cut back somewhere 🙂 I put a dollop of cream cheese frosting on top and a couple of Candy Corn for the Halloween touch.

♥ Another use for your Candy Corn is to bake some Butternut Squash as directed, scoop out and sprinkle some Candy Corn to sweeten it, makes it chewy and sweet, yummo…
